Vegetarian Thanksgiving recipes that you may have missed

A lot of people visited this blog last month, specifically to view the “So Many Things to do with Green Tomatoes” post from 2022. That post has recipes for Roasted Green Tomatoes with Winter Squash, Miso and Harisa, a Blood of the Green Tomato Cocktail and a very good Green Tomato Jam. I’m pleased that this post is suddenly drawing interest after two years! If you have green tomatoes, definitely take a look,

Some recipes get a lot of attention right when I post them, and others take a while for people to notice them. Then there are the recipes that just never get a lot of views. Maybe my timing is off, or I’m not tagging them right? Here are six great recipes that not many people have seen. I chose these six recipes because 1) They are excellent dishes for upcoming holiday meals 2) They are all vegetarian and all but one is vegan (or could be adapted) and 3) They’ve not recieved many views, so you may have missed them. The first four are very simple and the last two require some time and effort for multiple steps.

Marinated White Beans and Radicchio

A very simple and beautiful appetizer for a fancy meal. I also often make it for myself as a quick lunch. Skip the cheese to make it totally vegan (the cheese is superfluous in my opinion anyway). Find the recipe for marinated white beans and radicchio here

Blistered Green Beans with Walnut Dressing

One of the best recipes I’ve ever made! This would make a fantastic side for Thanksgiving, where green vegetables are often in short supply. I also often make this as a quick lunch when my farmshare has sent me green beans. I make the dressing in big batches to keep in my fridge. This is vegan. Miso Broiled Cauliflower

I posted this over 20 years ago and for some reason, hardly anyone has looked at it. It would make a delicious and unusual Thanksgiving side dish. I usually make it as a super fast side to go with fish. It would be just as good made with vegan butter and agave instead of butter and honey. Find the recipe for Miso Broiled Cauliflower here.

Charred Harvest Vegetables with Romesco

An excellent plant based offering for a Thanksgiving meal. I individually plated them for the meal that I photographed in the is post, but for a family style gatheirng I would do a big platter of charred vegetables for people to share. Both the romesco and the charred vegetables are simple to make and can be prepared in advance, since they are best served at room temperature. Leek and Truffle Tart with Hazelnuts

This recipe has only been on the blog for less than a year, which is why it has not been viewed as much. It’s not an easy recipe, but well worth the time and effort if you want to make a decadent, vegetarian main dish for Thanksgiving. I would not try to make this vegan. I’ve posted many recipes for different flavors of vegan cashew cream parfaits, and somehow this one has gotten lost in the shuffle! You make these in advance and pull them out of the freezer about 15 minutes before serving. which makes them a very good option for a fancy plant based dinner party.     Erin,Thanks for these recipes. I’ve been invited to a Friendsgiving dinner by a friend who is meat, gluten, and dairy free. And another friend who is just a plain picky eater. It’s been hard trying to find recipes that will suit both. This gives me some ideas. Hope you are well and as busy as you want to be,Ron
