Rima’s Indian Inspired Green Beans

This recipe is from the lovely and talented Rima Fand.   I served them recently with the goose braised in port, but they would be very good in any menu.  They are simple, easy and totally yummy!

RIMA’S INDIAN INSPIRED GREEN BEANS

 

  • some mild oil  (about 2 Tablespoons)
  • cumin seeds (about 2 teaspoons)
  • black mustard seeds (about 1 teaspoon)
  • green beans, washed and trimmed (about 5 cups)
  • a bit of water
  • coriander (about 1/2 teaspoon)
  • salt to taste
  • roasted, unsalted cashews (about a cup chopped)
  • currants (about 3/4 cup)
  1. Heat the oil in a large skilled.
  2. Add the cumin and mustard seeds and roast until they start to pop.
  3. Add the green beans and a bit of water and stir dry until the beans are bright green and tender.
  4. season to taste with salt and coriander.
  5. Toss with roasted, chopped cashews and currants (save a bit of cashew for the top).
