Summer Recipes You May Have Missed (vegan/ vegetarian/ gluten-free)

I’m continuing my project of reposting recipes that not many folks looked at when I first posted them. I have a lot for summer. Here is a terrific menu for the July holiday weekend, especially if you are feeding folks who are vegan, vegetarian and/ or gluten free.

Almond, Fennel & Tempeh Burgers

I invented these in college when I was a vegetarian. I’m proud to say that this recipe has really stood the test of time. These burgers are delicious, even if you are meat eater and think that you hate tempeh. They are rich and full of umami flavor. They have a shiitake mushroom and swiss cheese topping. If you are feeding vegans I think they would still be good without the cheese, but I also hear that vegan cheese has some a long way. I eat these on gluten free buns but if you can eat gluten I recommend a bun with seseame seeds on it. Sadly, I’ve never been able to find a gluten-free bun with sesame seeds. Watermelon Gazpacho

I make this cold, vegan soup so much in the summer. It’s tangy, savory and a little bit sweet and makes a great addition to any summer menu. It’s also makes a great lunch when it is so hot that food seems ridiculous. This is recipe from Small Plates and Sweet Treats by Aran Goyoaga. In additon to writing amazing gluten free baking recipes, Aran’s cookbooks include delicious recipes for savory food. I’m a huge fan. Go buy her cookbooks. Cashew, Dill & Lemon Dressing

I love dill and I get a lot of it in my farmshare every summer. This vegan dressing is easy to make and keeps well in a sealed container in the fridge. Passionfruit Raspberry Tarts

I made these originally for a Valentines Day event, but they are a great summer dessert because the cashew cream actually sets up in the freezer. You can serve them very cold in hot weather, like a fancy vegan icecream tart. Passionfruit and raspberry are my favorite flavor combination, but if passionfruit juice is not available, lemon would be an equally refereshing substitute.
